I honestly can’t remember the last time I had nachos. Every Sunday night back when I was in high school, my family used to have a build your own nacho plate night and we would watch America’s Funniest Home Videos. That was our weekly tradition and I loved it so much. That was until we transitioned to make your own baked potato night, which I wasn’t as fond of at the time, but now I’ve come to my senses and enjoy a good loaded baked potato.
Since going vegan, I hadn’t made nachos yet! I finally had to curb the craving, so I made these 7-ingredient nachos.
Ten Minute Nachos
- 1/2 bag tortilla chips
- 15 ounces black beans
- 2 cups Gardein "beefless" ground
- 1 cup Go Veggie vegan cheese
- 5 tbsp chopped red onion
- 2 tbsp chopped cilantro
- 1/2 diced avocado
Preheat the oven to 350 degrees.
Line a baking sheet with a baking mat or parchment paper.
Cook the “beefless” ground and black beans on medium heat for 5 minutes.
Chop your avocado, onion, and cilantro.
Start stacking your chips, “beef”, beans, “cheese” and onion in layers.
Slide tray into the oven for 5 minutes.
Top with avocado and cilantro and serve immediately.
First, preheat your oven to 350 degrees and get started on heating up your Gardein Beefless ground and your black beans on the stove on medium heat for about 5 minutes each.
Then, take a sheet pan and lay down a baking mat. Start laying down your tortilla chips. We went with the lime-flavored ones, and I can’t ever seem to go back to the original flavor after trying those!
Layer your chips, beans, “cheese”, “beef”, and onions until you get a nice mountain of all the toppings.
Slide that bad boy into the oven and wait about 5 minutes or until your liking.
Once you place your nachos in the oven, cut up your avocado and cilantro.
The “Go Veggie” cheese won’t really melt in the oven, at least in my experience, but still tastes good!
I’ve had the Follow Your Heart brand of cheese and that one is my absolute favorite and melts the best that I’ve seen so far. However, my store doesn’t carry it yet. So if you can get your hands on that brand, they will be perfect for your nachos!
