Mindful Eating

Why I Went Vegan

Part of my beliefs on being mindful led me to change to a vegan lifestyle. I know not all of you are interested in becoming vegan and that’s okay! I just want to be here for all of my fellow vegans of course, but also for anyone interested in making small or big changes with their health, for anyone who just wants to try out one or two vegan recipes, or someone who just wants to add a different source of plant-based protein to their diet. There are so many ways we can be conscious about what we’re putting into our bodies, and I want to be able to guide people to that simpler, healthier, lifestyle.

So here’s my story.

Vegan Oatmeal

I began researching veganism after one of my close friends made the transition from vegetarian to vegan. I was definitely intrigued, but not totally convinced, as I mean, who could give up cheesecake?

She told me to watch some documentaries on Netflix like “What the Health” and “Forks over Knives”. I waited a little while before giving in to watching them, because who really watches something after just one recommendation from a friend?

But one day, after thirty fruitless minutes of browsing my Netflix queue, I caved in and watched one. Then another. And then another. Afterwards, I knew I wanted to make a change.

Now I will be upfront: I am not 100% vegan in all aspects of my life. I feel like there’s so much pressure once you say, “I’m vegan” to be a perfect vegan, and then there is massive judgment if you’re not. I feel like people should be able to live whatever lifestyle they want whether it be at 100% or 20%.

I just wanted to make changes for my health and be more conscious of the food that is going into my body. My husband isn’t vegan and swears he could never be because #meatislife, but he still eats and enjoys vegan meals that I cook for us weekly.

I am learning more about veganism every day, as I only made the switch at the beginning of 2018. So come along with me as I share recipes that I cook with 5-10 ingredients or less. (c’mon, where are all my lazy cooks out there?!)
